Welcome to another instalment of ‘The Deadly Bush Foods’ V3 dinner, hosted by Tully State High School – Year 12 Kitchen Operations team and Girringun Aboriginal Corporation.
The dinner will showcase the amazing work that goes on behind the scenes, on Aboriginal country where Tully State High School, Girringun Region Traditional Owners and Girringun Aboriginal Corporation wild harvest the bush food from native plants within the local region and enable students to design, create and produce dishes to culturally immerse guests.
Guests can expect to receive a ‘Four Course’ menu consisting of a variety of small tasting platters. Dishes include:
Entree: Salt Bush Arancini and Burdekin Plum Relish with Side Salad
Main 1: Kangaroo and Ginger Leaf Ragout Lasagne with Alexandra Palm Slaw
Main 2: Corned Beef with Yam cooked three ways finished off with Beschamel Quandong Sauce
Dessert 1: Chocolate Delice Cake with Murrgan Jam
Dessert 2: Lemon Myrtle Cheesesponge Cake
